Did some more looking around today and found the answer to my question.
The accelerator pedal sensor connections are different between models.
The older style pedal like my 09 has a 8(7) pin connector:
The newer 2011+ pedal has a 6 pin:
So... My plan won't work unfortunately.
I'll probably just have to find some good looking pedal covers somewhere now I guess.
