Power steering on mine is not right but I just bought it. Also, the power lift gate grinds on opening.

Vanyel, any issues steering at parking speeds? Also, are you comfortable driving it with a couple fingers at speed, or do you feel you have to have at least a firm grip on the wheel? I've just picked up a 2013 Edge Limited V6 AWD.

Engine is a non-EcoBoost V6; likely hydraulic steering.

James, at speed the steering seems a bit stiff, but not as pronounced as during parking speeds. I cannot comfortably steer at speed with anything less than a one-handed firm grip. My 2012 Explorer is effortless in both parking speeds and driving speeds.

Should I need two hands to generate the strength to turn the wheel during parking maneuvers? I've never experienced this before.

You're not alone in this experience. I've rented and owned a myriad of Fords since the mid-90's and just bought a 2013 Ford Edge. I experience the exact same issue. I fear this will be a fight to get it rectified so it handles like any other Ford SUV FWD/AWD.
